Chestnut Soup Recipe
This simple soup recipe is the type of dish mountain people could have prepared using nuts from the American Chestnut Tree.
2 cups chestnut puree*
4 cups chicken stock (or veg stock)
2 cups milk
1 pinch mace
salt and pepper to taste
Mix the chestnut puree in a saucepan with the stock, milk and mace. Heat and season to taste with salt and pepper. Serve hot.
*make sure you buy real chestnuts or chestnut puree, not water chestnuts.
