Chestnut Soup

While nuts from the American Chestnut Tree are no longer available due to the blight, other varities of chestnuts can be ordered online.

This simple soup recipe is the type of dish mountain people could have prepared using nuts from the American Chestnut Tree.

Chestnut Soup


2 cups chestnut puree*

4 cups chicken stock (or veg stock)

2 cups milk

1 pinch mace

salt and pepper to taste

Mix the chestnut puree in a saucepan with the stock, milk and mace. Heat and season to taste with salt and pepper. Serve hot.

*make sure you buy real chestnuts or chestnut puree, not water chestnuts.
